I would get the second one as it would be easier to take apart so you could start on one or two pins then build up from that. Get a slimline pickset and you will be fine.

It depends, with both the fist (euro profile cyinder) and second (standard cylinder) on the quality of the locks. If the locks are of good quality they will have spool or mushroom pins, these are fitted by the manufacturer to make them more difficult to pick. Both locks are pin tumbler locks and a standard set of picks will be ok. If the keyway is quite restricted with the warding then a slim line set may be required. You could make some of you own picks if you don't have any, search the threads and you will find all you need. If you are new to lock picking I would go for a cheap version of the standard cylinder (one with no anti pick pins) to start with, then progress to the more difficult ones.

can you write me the names of picks in standart pickset? because in poland it's illegal to have lockpicks unless you are locksmith :/ and i can't buy them. But my plan is to do them by my hands :D
PS.: "slim line" means the picks are smaller? or slimmer? or both?

5 second because is very simple lock - no spools, no mushroom and other advanced security. Only simple pin

Both of those locks would be fine to start on. Neither would have security pins, and the second one (the rim cylinder) would be slightly easier to repin (the euro cylinder would most likely involve drilling retainers).
