re: double sided wafer locks (typically)
I used to work on elevator locks pretty regularly, and they all used double sided wafer (or tubular, but that's a different story).
My best success was to use my favorite regular tension wrench, pick one side, then keep the tension on, and pick the other. you can feel it move, since everything is connected by that one large spring.
I've personally never found much use for those double sided things, they just get in my way (but I'm left handed, so most generic tools do).
