myself i have a pair of peerless 801 and a small set of american (iirc) chain for use on smaller individuals. (when i do security work)
in general handcuffs are an impediment to movement and when properly applied reasonably difficult to get out of (doubel locked, keyways pointed away from hands) but not at all hard to bypass if you're reasonably determined and resourseful.
asp had some issues with security on the first generation of their cuffs, btu i'm told that these have been remedied, although i have nto inspected a pair of their new ones personally.
i'm not as big a fan of s&w although they make a great product, i just like the feel and movement of peerless better.
the americans i have are not great, but it's difficult to find small size cuffs, and they are reasonably secure if made to lower tolerances.
you want REAL fun, get a set of the peerless high security or a cuff box to add to them.
