(I'm interested in scorpion CX-5 (high security deadbolt)
Let's say I opened the lock
Will there be any way I can "unpick" the lock and lock it back?

Just pick it in the other way around

but keep in mind that most locks are easier to pick one way than the other, cx-5 would be pretty hard either way, since you have spool pins and a sidebar to contend with, don't count on being able to pick it closed.
