so why do some picks have their stem originating at the bottom of the handle and others at the middle?

They do handle a bit differently, but it depends more on the shape of the tip.

Its hard to make a ball pick for example, with the shaft along the "bottom", same with rakes.

Diamonds and hooks however do not have this consideration.

Mostly its about design, but if you are hand cutting picks, the bottom shaft makes for a lot of ease in your grinding or cutting.

some members have posted photos of picks where the shaft comes off the edge of the handle and goes diagonally to the other edge where the pick tip is formed, this give a slightly more ergonomic or perhaps there is another word for it, allowing the hand holding the pic to be held beneath the lock, of course, these style of picks do not work well when flipped over for an upside down installation, so you have to make them in both up and down versions. as for the straight popsicle handles, the shafts are either from one side or down the middle, both of which are a bit of laziness on the part of the designer. You can do it differently and get something better. Don't feel like the designs you see are some kind of limitations. break out of the box.
