Firstly, I'd strongest recommend that you do not pick locks that you depend on. Such as doorknobs in your home. It's risky and could leave you with an expensive repair. The first 2 essential rules to the hobby of lockpicking is not to pick a lock you depend on (unless you have to, of course), and not to pick a lock that you have no permission from the owner to do so. The first rule is not necessarily the case with professional locksmiths, but that's a different story. Of course, it's a free world (partly), so you can do as you wish, and I can only make respectful recommendations, but I thought it best to mention it nonetheless.
I would suggest you buy a table vice and practice with locks set in that. That is what the vast majority of us practice.
I'll assume that when you say "pick proof systems" that you mean security pins in the locks. I'll also assume that you're talking about pin tumblers.
I'd recommend that you firstly try a variety of locks without security pins. This will give plenty of practice on a variety of keyways. All locks are different, so just experimenting with different locks in general will be extremely valuable experience. One that's done, and you have some comprehensive understanding of what is going on inside different locks when you're picking them, I'd say by 1 or 2 locks that have security pins and go from there.
You could buy a progressive lock. They are extremely useful to begin with. Then it's all about practice, practice, practice. As well as being practical and progressive in that practice. In that way, you'll find plenty of enjoyable challenges and have the great buzz of progressing in skills.
