I usually will try with a knife edge, if that doesn't work I'll just smooth the top out.

hmmm, would putting a depth and space key next to the key you are filing help with figuring out if you are at a cut or half cut, and how many more pushes of the file are needed?
I lke the LAB key guage idea,
