Here is something about binding order that I wrote last month:
viewtopic.php?f=8&t=59836&p=440573&hilit=binding+order#p440356To address your questions, if it is the same lock, binding order should be the same. The tolerances are on a very small scale though so it may appear that sometimes it is 12345 and sometimes 52341, each lock has it's own personality.
I don't think tension amount will change the binding order. plug turning direction clockwise or counter-clockwise (anti-clockwise UK) will change the binding order, this search result helps visualize it:
