There is really nothing causing the different pins to bind in different order except how much tension you are putting on the cylinder and how you are working your pick.
It's just springs and pins in there. Nothing inside the lock is changing
Some do tend to pick easier in the wrong direction. A couple of things could cause it like tapered pin chambers or worn/filed pins. Also the bible could have a tapered chamber or even a worn spot on it from a slightly miscut key and pins popping.
Either way, that's why God made plug spinners.
