Well you draw up a contract, and have a lawer do it at that,
It must state the terms youve agreed on and you must both sign it with witness's,
Business is business, he will understand such a proceedure has to be done,
Make sure it states who owns the equipment and who cleans it, i suggest you stipulate a qualified electrician services it if it goes faulty that way you cant be blamed for burning his shop down,
You also state that its for your products and your products only,
You should also state what cut from the PROFIT he gets, expenses must always be paid first,
You should also state in what conditions the food is to be served, he will be a representative of your food dont forget so it needs to be handled right and not have dirty hands all over it and/or mouldy, hygene precautions must be made as in they must wash their hands before serving etc,
Ive no experiance but thats the route i would go down,
You need to seek proper legal advice and not the opinion of a piking forum as if things goe wrong you will be the one out of pocket and we wont care (I dont mean that litery but you know what i mean)
