You can use your rakes any way you like!
I prefer single pin picking, but sometimes I even rake with a hook.

I use my rakes either way, like having 2 picks in one.. There are many different raking techniques. of course. You can even rake on the way in, which could be called push-raking, or even, hehe, bulldozing.

Some people refer to raking as scrubbing, but I consider scrubbibg to be when you rake both on the way in and on the way out... back and forth if you will. The way some people do this, I would call it the pin-sawing technique!

speaking of saws, you can often get good results with a sawtooth rake, but don't use that upside down or you end up with just a straight pick. (Also pretty effective, but not good for raking)
