In my opinion (and in certain jurisdictions) often a suitable gun saae will comprise 2 separate locks. A combination and a key. usually one person has the key and a separate person knows the combination. this provides a checks and balances approach to gun safety.
That being said, there are specific requirements as to the material construction of the firearm safe. It is also my opinion that you should lock ammunition separately from the firearm.
As to the lock specifics. I think you'd be better off with a S&G (or equivalent) dial combination lock. They are deliberately built for the application and often work forever with little maintenance.
Yes, Simplex are considered an industry standard for doors, but safes? I doubt they are a suitable product for the application (however I have seen them used).
