yeah, that would indeed be an all in one lol, as for the two sticking out on the left, I would go with possibly wafer auto locks, maybe even a GM sidebar if you think you are up to it for the other 6 locks, maybe you could go by lock difficulty instead of number of pins, ex: start out with a kwikset, go to a schlage or yale, and end up with like a dimple lock or something possibly easier

Would it be practial to put 1-3/8" holes in for rim cylinders? The operation is the same, but the action of opening a nightlatch/panic bar is different, requires different tension, harder turning pressure after picking etc.
BTW, I would recommend leaving the bolts in your locks. One of the first locks I picked was in a KIK unit in my hand, I don't know how many times I had it picked before I realized I wasn't turning hard enough to retract the latch.
If you made 2-1/8" holes in your current boards (good call with the handles by the way) you should be good to put KIK's in them for different practice feel. If you did 1-1/2 or 1-5/8" holes, you might want to do one or two with bigger cross-bores to put KIK's in.
