I'm planning on ordering a Schlage Everest lock but there is one thing I need clarification on. On the site I want to order from, the discription says that these locks come "zero bitted". Does this mean the lock would come without the check pin along with no regular pin stacks or would the check pin be there and just have no regular pins?

It will be fully pinned. Check pin will be there and the bitting will be 000000.
For the best book out there on high security locks and their operation, take a look at amazon.com for High-Security Mechanical Locks An Encyclopedic Reference. Written by our very own site member Greyman! A true 5 Star read!!

Eyes? Are you sure you want a zero bitted lock? If you understood Zeke, he means that the lock will be loaded with six bottom pins of identical height, that is to say, the absolute smallest height of all Schlage's ten potential pin heights.
The keys you'll get will look almost like uncut keys, just with six little tiny grooves.
It won't be much of a challenge to pick.
Everest locks will accomodate bottom pins from other locks, of course, and you can recombinate to your hearts delight, but I don't know, you might be happier requesting one that's allready keyed up to a random combination - say, 453865, for example, instead of 000000.
Just a heads up, in case you didn't catch that.

I have a Emerald Wedge pinning kit and I'm also very comfortable with rekeying locks myself so a zero bitted lock will not be a problem. I just want something new I can work on cos my mortise locks are getting boring and my medeco locks are still too much of a challange at this point.

I hear ya. After you've exhausted just about every kind of lock you can get at the hardware store you have to start investing some more serious money into practice locks...

I'd want to give locks like Chicago's TuBar or a Primus a try later on but those two types are so difficult to get my hands on. I'd have to go to a locksmith but when you buy locks like those they always "interview" you before they tell you that they do carry them, at least in my experience.
