This is a two part question.
Does anybody know how much a locksmith make's a year in Stockton Ca.
and is it really worth opening your own business?

Their is really no way to answer that. Depending on the type of work done most often it would be hard to say. Then add wether the person does safe work, sells safes, security systems etc. As far as question 2 goes. If you have your own business, locksmith or otherwise you will need to work alot harder because you will be responsible for all aspects of it.

I've spoken with two different locksmiths in the SoCal area a few years back, and they both discouraged me from entering the lock trade because they said the pay supposedly stinks. I don't know if they were just trying to keep a punk kid out of the trade or really meant what they said though.

Did you ask them why they were still in business if the money is so bad?

There is money to be made in every town as a locksmith. Finding your niche in the market is the trick.

I know guys that struggle to make $1,000 a week and guys that invoice well over that each day consistently.

It's not all about locksmithing skills, youve got to have good business skills also.

I guess it was because they, like you said, were really bad at running a business and sucked at being able to do anything else.
