I wouldn't use servo motors. I'd take a old printer apart and use the stepper motors in there so you can set the exact degrees of the numbers by each "step" the motor must take. Most servo's would way to slow and not be as accurate unless you felt like spending a few hundred dollars on the high quality ones.
I toyed with basic stamps and it could do it but the basic language you use would probably take a while to program correctly.
And to your other question I do believe that any number combo is possible on that lock.
The part of this project your undertaking that confuses me is how are you going to set each number individually.
But then again this may be advanced topic because it is not exactly "picking" the lock. good luck and PM me if you have any questions about what I'm talking about.
