Difficulty is all relative to the individual lock picker. What can be a picking nightmare for one person, can be a walk in the park for another.
As far as high security locks (my definition of high security is any lock with more than one locking mechanism. I.e. pins and sidebar, sliders etc. Also locks that use non-standard pin tumbler mechanisms, dimple locks with multiple rows and lateral rows of pins) there are many very difficult ones.

Medeco series locks
Schlage Primus series locks
ASSA Twin series locks
EVVA locks
Dimple locks (CISA Astral, Kaba Gemini, Sargent Keso and more)

These are examples of high security locks, discussion on how to pick and bypass these locks isn't discussed in the open forums though.

There are other locks that can prove to be quite difficult to pick depending on the individual. American series locks can be a tough pick with the serrated key and top pins. Locks with restrictive key ways and heavy warding. Euro locks are known for narrow restrictive key ways.

Hope this helps you out some.

You can probably get these at a lock shop if they are contracted as a Medeco or ASSA dealer, it all depends. Likewise with the Schlage Primus and such. The dimple locks that I mentioned you will be better off finding on eBay since they are mainly used in Europe (from what I know).

Another thing, if you buy those locks (Medeco, ASSA, Primus) from a lock shop you will pay full retail price, which can get expensive.

When searching for locks to pick or collect you will find that eBay is your friend. Be warned though...it can get very addicting haha.
