You will not get better at picking by buying a cutaway lock. You may get a better understanding on what a shear line is or how a lock works, but that's all. All you need is some lock animations on youtube to figure out how a lock works, but yes, it is pretty and it is interesting to look at a cutaway in person, some people actually collect cutaway locks because they are pretty cool.
Schlage is better made and harder to pick because it is machined with tighter tolerances and the keyway is more paracentric. There are also more depth cuts on Schlage so it is easy to overlift a pin you do not mean to be lifting. Look at a Schlage key and a Kwikset key, you'll see the Kwikset is pretty flat all the way across compared to the jagged teeth of a Schlage key.
Just a note, some of the "Schlage" cutaways are actually generic locks with a Schlage SC1 keyway, but are not made to the same tolerances as a real genuine Schlage.
