May I suggest one method of building a mortise lock holder.
Use a flat board of whatever size is most convienent to you. Drill a 1 1/8 inch hole in the board where the mortise cylinder will be. Saw a slot down straight through the center of the drilled hole and a short way below it. At the top of the board drill a hole through the side all the way through. Insert a carridge bolt through the hole so it comes out the other side by about 1/4 inch. Put on a washer and a wing nut.
When the mortise cylinder is inserted in the 1 1/8 hole, tighten the wingnut to close the slot in the board. This compression will hold the mortise cylinder firmly. The cylinders can be switched out very simply and quickly by just loosening the wingnut.
There are many variations for this clamp type holder. Use your imagination.
