Instead of a cutaway lock, which will feel a little different than a non cutaway, get a practice lock such as the fantastic one by MrWizard. Then you can remove all the pins and springs one set at a time by simply removing an allen screw at the top of the lock. Load up one pin channel at a time, and get the feel of that. Add a second, and so forth.
