So my question is this, is it possible for the binding order on a lock to change due to wear?

Can't see why not. But in most cases, the wear would be on the pins, so repinning the lock should restore the old binding order.

Binding order can also change due to tension wrench type and angle it is installed, or at least such has been my experience.

Ahh, when I first started I was using BOK but now with my Peterson Pry Bar I am using TOK and it seems the bind order changed or I have just picked these locks way too much.

Right, using BOK, the torsional force is applied diagonally through the plug (from the front-bottom to the top-back.) TOK will apply the torsional force linearly down the shear-line (credit: https://www.youtube.com/watch?v=ll9N67ucvXs.) Also, because pins will generally wear most in the back and least in the front, binding order may appear to be from the back-to-the-front (credit going to Varjeal:http://www.lockpicking101.com/viewtopic.php?t=542)
There's nothing wrong with experimenting with pins of various diameters and placements to see how binding order can be affected.
