In general grade 1 is better than grade 2 which is better than grade 3. The ansi standards are rated on forcable entry techniques and longevity of the lock mechanism. I haven't seen any requirements for higher pick resistance from the grade 2 to grade 1, but it's usually there anyway. Most residential buildings really don't need a grade 1 lock and you can usually put the money to better use reinforcing other problem areas. That is if you're looking to install one. If you just want to play with it, have fun. :D

so, if i'm having a hard time picking a grade 2 schlage, a grade 1 would pretty much be impossible for me to pick, right?

Not necessarily. Each lock you come across is different and some just aren't easy to pick. Unless I miss my guess you're probably having problems with the spool pins. I'd stick to your grade 2, but pull the cylinder and only put back two or three pins to practice getting spools down. Once you're decent with that move up to 4, then 5. I really wouldn't shell out for a new one untill you practice getting yours open first. Good luck.

Your grade 2 Schlage has probably got a fair number of spool pins (mine has 4), plus a tight keyway. Grade 1 might include other security pins as well if I'm not mistaken, I'm having enough trouble with these spools at the moment :)
