Simple really, the lower the number the bigger the gauge or size!
It's not the levers that are of differing gauges, it's the keyways. If you look at most locks like a Chubb or Union it will have a 5g curtain, which will be bigger in diameter than an ERA Profit or Viscount which has a 7g.
If you look at a lock without a curtain, the hole at the top of the keyway can be of differing diameters. For instance, you won't be able to fit a 5g 2-in-1 pick into a lock with a 7g keyway as the keyway would be too small for the diameter of the pick.
You would, however, be able to fit a 7g 2-in-1 pick into a lock with a 5g keyway although it would be a very sloppy fit!
